隨著新年的臨近，距離大家回家的日子也越來越近啦!在佛山打拼了一年的人，已經陸續踏上了回家的征程，過年回家，帶點什麼有佛山風味的食品走親訪友呢？
As the Chinese New Year approaches, it is getting closer and closer for everyone to go home! Those who have been working in Foshan for a year have already been on their journey home. Are there any speciality in Foshan for us to visit our relatives and friends?

帶著新鮮煮熟的“角仔”從佛山跨越大洋回到自己國家有點難度，但是“煎堆油角”還是可以的呢。以前離春節還有十幾廿十日的時候，佛山家家戶戶都會開開油鑊炸些“角仔煎堆”，求來年的日子也像那隻油鑊似的油油潤潤、富富足足。
It seems difficult to take the freshly cooked "jiaozi" and return to his own country, but it’s feasible for “Jian Dui” or “fried jiaozi”. In the past, when it was ten or twenty days to the Spring Festival, every family in Foshan would open the oil wok and fry some “jiaozi” or “Jian Dui”, hoping that days of the coming year would be as plentiful as the oil wok.
And there was another foreign friend answered “Hot pot” without thinking, showing his deep love for “Hot pot”. Actually, there are many specialities in Foshan. Here we will introduce each of them to you!
西樵大餅
Xiqiao cake
佛山西樵大餅，距今已有300年的歷史，遠近馳名。它外型圓大，顏色白中微黃，不起焦、入口鬆軟、清香甜滑，食後不覺乾燥，可與雞蛋糕比美。
Xiqiao cake in Foshan can date back to 300 years ago and it’s famous for miles around. With large shape and color of light yellow, its soft and sweet feeling won’t make people feel dry after eating.
在製作的過程中，選上等白麵粉、白糖、豬油、雞蛋，配以山上甘泉水，發酵，然後在爐中烘製而成。因為餅形如滿月，寓花好月圓的意頭，故佛山人嫁娶喜慶、探親和過年過節，都以此作禮品送人。
During the process of making Xiqiao cake, superior white flour, white sugar, lard and eggs are selected as its raw material. After mixed with spring water, Xiqiao cake will be fermented in the oven. As the full-moon shape of the cake symbolizes a perfect life, they are usually taken as gifts during occasions of happy wedding, family visits and the Spring Festival.
大良蹦砂
Daliang Beng Sha
大良蹦砂(蝶形小吃)可追溯到清朝光緒時期(1882年)，起源於成記老店。大良蹦砂是由麵粉拌和豬油、南乳、白糖等配料油炸而成。
Daliang Beng Sha (大良蹦砂Butterfly-shaped Cookies)dates back to Guangxu period in the Qing Dynasty (1882), and it’s originated from Cheng Ji (成記) old shop. Daliang Beng Sha is fried with wheat flour and other ingredients of taro curd and white sugar.
經過多年的傳承，李禧記這一老字號形成，並以其獨特的風味和香脆的口感而受到人們的歡迎。形成了"李禧記"這個老字號。大良蹦砂風味獨特而為人推崇，繼而馳名港澳、新加坡、馬來西亞等地，是遊客到廣東必爭購買的小食。
After years of inheritance, Li Xi Ji (李禧記) emerged and it ‘s popular among people for its unique-flavored and crispy taste. Now it’s famous among HK, Macao, Singapore and Malaysia and etc., as a tourism souvenir for visitors.
醞扎豬蹄
Bundled Trotter
醞扎豬蹄是佛山一道特色名菜，可溯源到清代時期。醞扎豬蹄在選料、製作、調味、烹調方面具有獨特的特點。醞扎豬蹄有兩種形式，一是用整隻豬手醞制而成；一是用豬腳開皮，抽去腳筋和骨，再用豬肥肉夾著豬瘦肉包紮在豬腳皮內醞制。
Foshan Bundled Trotter is a characteristic dish in Foshan and it was first created in the last years of the Qing Dynasty. It has unique points in material selecting, making, seasoning and cooking. There are two kinds of making processes. One is to boil a whole trotter slowly with condiments, and the other is to skin the trotter, take out the tendons and bones, fill in fat and lean meat inside the skin, and then boil it.
盲公餅
Blind man's cake
盲公餅是佛山有名的特產之一，由一盲人創制於清嘉慶後期，因創始人是個盲人，故得名盲公餅。
Blind man's cake is one of the famous specialities in Foshan and it can date back to late Qing Jiaqing period. Just as its name implies, Blind man's cake was first created by a blind man.
盲公餅距今已有100多年的歷史，用糯米配以食糖、花生、芝麻、豬肉、生油等上乘原料巧制而成。餅內所夾的豬肉，其製法更為美妙精巧，用幼細白糖醃藏數月(最少數天)才取出配製，吃起來甘美酥脆，美味可口，享譽中外。
Blind man's cake has a history of more than 100 years and it’s made from glutinous rice with sugar, peanuts, sesame, pork, raw oil, etc. The pork in the cake is made in a more exquisite way by salting the pork in white sugar for several months, which tastes sweet and crisp, making it delicious and famous at home and abroad.
九江雙蒸酒
Jiujiang Shuangzhengjiu
九江雙蒸酒，被稱為是酒類中的萬寶路。九江雙蒸酒始創於清朝道光初年，距今已經有差不多200年的歷史。兩個世紀以來，九江雙蒸酒逐漸形成了獨特的釀造技藝。
Jiujiang Shuangzhengjiu is called Marlboro among all kinds of wine. Jiujiang Shuangzhengjiu was founded in the early years of Daoguang period in the Qing Dynasty and it has a history of about 200 years so far. Over the past two centuries , Jiujiang Shuangzhengjiu has gradually formed a unique brewing technique .
九江雙蒸酒主要是用大米做的。九江雙蒸酒是傳統粵菜中最常用的烹飪酒之一，它用於慶祝重要的日子或節日，如婚禮、新生兒滿月、生日聚會、中秋節、春節等，這個習俗世代相傳一直延續至今。
Jiujiang Shuangzhengjiu is mainly made of rice. It is one of the most often used cooking wines in traditional Cantonese cuisines and it’s used during occasions of celebrating important days or festivals such as wedding, the first month celebration of a newborn baby, birthday party, the mid-autumn festival, the Spring Festival and etc. The host will offer Jiujiang Shuangzhengjiu to guests. This custom has been passed on from generations to generations.
佛山柱侯醬
Foshan Zhuhou Sauce
佛山柱侯醬色鮮味美、香甜適中，有芬芳的豉味，是別有風味的調味佳品。多100年來，柱侯食品成為佛山最有特色的食品配料之一，遠近聞名，深受人們的稱道。
Foshan Zhu Hou sauce is a special flavor with moderate sweetness and fragrant taste. Over more than 100 years, Zhu Hou sauce has been one of Foshan’s most distinctive ingredients and it’s well known and received by people.
九江煎堆
Jiujiang Jian Dui
九江煎堆是南海區九江鎮的特產。九江煎堆特點是色澤金黃，皮薄餡精，入口甘香酥化，形狀扁圓。清朝時，九江人鄒便南改革廣東小吃煎堆製作工藝，改良而成的廣東小吃“九江酥皮大煎堆”非常受歡迎。九江煎堆同九江雙蒸、魚花一道被譽為“九江三件寶”。
Jiujiang Jian Dui is a specialty in Jiujiang Town of Nanhai District. Jiujiang Jian Dui is golden in color, thin in skin and fragrant and crisp in taste. In Qing Dynasty, Jiujiang local resident Zou Biannan reformed the making process of Jian Dui and the improved Guangdong snack "Jiujiang Crispy Big Jian Dui" was very popular.
