Vietnamese girls do not have interest in Chinese guys in general. Most of them haven't met any Chinese people in their lives. I believe many girls would want to marry Chinese guys but those guys are the ones who very famous-rich-handsome like Luhan, Wu Yi Fan, Yang Yang or TF boys. Others than that average Chinese guys are at the bottom of desire same with other Asian guys, Taiwanese Korean Japanese Malaysian Singaporean -> no difference. The only guys that have good images of good looking well educated are from Canada, Germany, Australia,..

It depends on the girl and where they are raised. If they are from Vietnam directly then probably not. But if they are girls who grew up overseas then they probably do. For example, I am American born and raised and I get along with most Chinese guys very well. I get along with them better than Vietnamese guys as I cannot get along with Vietnamese guys. Generally, I find Chinese guys humble, shy and down to earth. Some are very kind too.

Typically, the Vietnamese women who agree to marry them are from poor rural provinces, who hope to have better prospects in China so they can send money back to help their families. Filial piety is still a big thing in Vietnam, especially in the provinces. So most marriages with Chinese men are for economic reasons, not love. Most of the times they are not presented with a real picture of life in China, and do not know that life in rural China is only slightly better than life in rural Vietnam.
